VEGESUSHI, created for the health-conscious or for those who can’t, don’t eat fish. It is a new style of sushi conceptualized by Hoxai Kitchen, artist Sougen Ichizumi. VEGESUSHI is based on KYOTO’s vegetarian culture and traditional rectangular-shaped pressed sushi. But surely it’s made out of only colorful vegetables, delicately cooked, and decorated sushi blocks are served like cakes. The first recipe book, “VEGESUSHI” is a bestseller in Japan and their culinary team - Designer Sogen, Chef Kei, and vegetable sommelier Juno have been celebrated, their workshop have been a huge success in Paris, Berlin, Tokyo.
